Frequently Asked Questions

How much does Delivery cost?
Delivery is free on whole and half beef orders within a 40 mile radius of Boerne. We do not deliver outside the 40 mile range. Delivery area includes Boerne, Comfort, Kerrville, Pipe Creek, Bandera, Helotes, New Braunfels, Schertz, Selma, Live Oak, Converse, Universal City, Marion, Canyon Lake, and the greater San Antonio area. There is not delivery on lambs. Lambs are available for pickup at the sheep farm in Center Point.

What cuts of beef do I get?
We have a preset cut sheet that we use, to determine how the carcass is cut. The cuts are brisket, chuck eye steak, Denver steak, flat iron steak, ribeye, ground beef, filet mignon, osso buco (shank), New York strip, skirt steak, flank steak, sirloin, cutlets, stew meat, ribs, roast, tri-tip, and picanha. The meat is vacuum packed and frozen.

What are the cut specs?
Ribeye and New York strip are 1 ¼ inch thick. Sirloin is 1 inch thick. Fillet mignon is 1 ¾ inch thick. Chuck steaks are ¾ inch thick. Skirt, flank, and cutlets are tenderized. Ground beef is mixed at 85/15 ratio.

Can I do a custom cut order instead of using the predetermined cut sheet?
Yes. Please notify us in the contact section of the website after you place your order. Leave your name, email, and phone number, and we will contact you about your custom cut order. There is a $40 additional charge on all custom cut orders. Please note that their will be limited availability for custom cut orders this summer.

How much freezer space do I need?
We recommend at least 15 cubic feet for a whole steer, and 7.5 cubic feet for a half steer.

What is the difference between angus beef, wagyu beef, and grass fed beef?
The angus breed was developed as a beef breed in Scotland in 1835. Angus cattle have great flavor and marbling characteristics. Angus beef is the most popular option among our customers.
The wagyu black breed was developed in Japan in the 1860’s. The breed was developed to maximize marbling and fat quality. Wagyu is consistently the highest grading beef available.
Grass fed beef is the leanest beef available. The cattle are 100% grass fed and grass finished. Because the cattle don’t eat any grain, the meat has low fat, and low marbling. Grass fed beef will not grade as high as other beef due to lack of fat marbling.

What is marbling?
Marbling is white flecks of fat within the meat muscle. The greater amount of marbling in beef, the higher the grade, because marbling makes beef more tender, flavorful, and juicy.

What is hanging weight, and what is boxed weight?
Hanging weight is the weight of the carcass before it is cut. Boxed weight is the weight of the meat after it is cut into individual portions of meat. The amount of meat you receive (boxed weight) will weigh about 60 - 65% of hanging weight (75% on lambs), as bones are removed while making the cuts.

Do you sell by the quarter?
No. We do not sell by the quarter at this time. Many customers, however, further split the halves with friends and neighbors if they do not want an entire half carcass order for themselves.

I see the month of delivery, but no exact date. When, exactly, will my order be delivered?
Due to the schedule of the butcher, we are unable to provide an exact date for delivery until about one week prior. If you need special accommodation for a particular delivery time, please notify us with your name, email, and phone number in the contact section of the website after you place your order.

What happens with the deposit that I pay on the website?

The deposit is used to reserve your order. It is applied to the total amount due. The remaining balance is payable with cash or check upon delivery of your order.

Are antibiotics used for feeding to increase weight gain?

No. We are different than most all other beef producers because we do not use antibiotics for added weight gain. Commercial feedlots add antibiotic compounds known as ionophores to the feed of the cattle sold for beef in the grocery stores. These chemical compounds change the gut micro-biome of the animal, and they change the way the animal’s rumen functions. We do not do this. We raise beef on grass with options of 100% grass-fed grass-finished, or a light all-natural grain finish.

Are growth hormones used to increase weight gain?
No. Contrary to most commercial beef, we do not use growth hormones. Most grocery store beef animals are implanted with powerful steroids and hormones to increase weight gain. These compounds include progesterone, estradiol benzoate, trenbolone acetate, and testosterone. We do not use any of these. Our beef is not implanted with hormones.

Do you use mRNA vaccines in the cattle?
No. We do not use mRNA vaccines as this goes against our philosophy of raising beef naturally.

Are the cattle grass fed? What do they eat?
We offer both grass fed and grain fed options as we have customers who prefer both. The meat listed as grass-fed on this website comes from 100% grass-fed and grass-finished cattle. The other products not specifically listed as grass-fed, still eat grass for their entire life span. However, they are supplemented with grain for the last few months before slaughter. Whether you prefer 100% grass-fed and grass-finished, or you prefer some grain feeding, we offer both options.

Can we pick up our order from the farm instead of having it delivered?
Lamb orders are pickup only at the sheep farm in Center Point. For beef orders, we are unable to accommodate pickup on the farm as we do not have a full-time employee available to help customers with pickup. Instead, we will call you to arrange free delivery. (We deliver beef in a 40 mile radius from Boerne)
